Recipe for May: Egg/Sausage Bake for 1!

Before you begin, preheat your oven to 350 Deg.

This recipe is for a serving size of 1 person.

The ingredients are:

2 Eggs.

1 slice of white toast. You could probably use wheat if you want to keep it somewhat healthy.

1/2 Cup of Sausage.

3/4 Cup of frozen hash browns. We use a variety has has diced bell pepper and onion in the mix.

Sprinkle of Cheese. We use a 4 cheese blend.

Cooking supplies: A Ramekin (ours is 2.25" tall x 5.25" diam.), Non-stick cooking spray, 2 frying pans & wooden spoons (not pictured)

You will also need a mixing bowl and whisk for the eggs.

Cook the sausage until brown.

Cook the hashbrowns as directed on the package until lightly golden.

Whisk eggs together.

Set your toaster for medium and toast the slice of bread. If you want it darker or lighter, adjust the toaster as needed. After it is toasted, cut away the crust.

Spray the ramekin with the non-stick cooking spray. Then place the toast in the middle.

Add the sausage next and then add the hash browns.

Pour in the beaten eggs.

Sprinkle a little bit of cheese on top.

Place in the oven and bake for 25-30 minutes or until the top is firm and golden brown.

Serve on a salad plate with fresh fruit on the side. Enjoy!
